- 4 cups watermelon (cubed)
- 2 cups blueberries (fresh)
- 1 cup feta cheese (crumbled)
- 1/4 cup fresh mint leaves (chopped (optional))
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar (optional)
- Salt and pepper (to taste)
Instructions
- Start by preparing your fruits. Cube the watermelon and rinse the blueberries under cold water.
- In a large bowl, combine the cubed watermelon and blueberries.
- Add the crumbled feta cheese on top of the fruit mixture.
- If you’re using mint, toss it in now for a burst of freshness.
- In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle this over the salad.
- Gently toss all the ingredients together until well combined. Be careful not to mash the fruit!
- Season with salt and pepper to taste. You can adjust the seasoning based on your preference.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld together.
