- 8 slices turkey bacon (cooked and chopped)
- 6 large eggs
- 1 cup shredded cheese (cheddar or your favorite type)
- 1/2 cup milk
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped green onions
- Salt and pepper (to taste)
- Cooking spray (for greasing the muffin tin)
Instructions
- Preheat your oven to 350°F (175°C). This will ensure your cups bake evenly.
- Grease a muffin tin with cooking spray or a bit of oil to prevent sticking. You want to make sure these come out easily!
- In a large bowl, whisk together the eggs and milk until well combined. Beat them until they’re frothy; this adds volume.
- Add in the chopped turkey bacon, diced bell peppers, green onions, cheese, salt, and pepper. Stir everything together, making sure the ingredients are well distributed.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full. You want them to puff up without overflowing.
- Bake in the preheated oven for about 20-25 minutes. They’re ready when the tops are set and slightly golden. A toothpick inserted should come out clean.
- Once baked, let them cool for a few minutes before carefully removing them from the muffin tin. Use a spoon if needed.
