Irresistible Spiced Apple Cider Donut Loaf Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup apple cider
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup diced apples (optional)
  • For the topping: ¼ cup granulated sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the dry ingredients (flour, sugar, baking powder, baking soda, cinnamon, nutmeg, salt) in a large bowl.
  3. In another bowl, combine the wet ingredients (apple cider, vegetable oil, eggs, vanilla extract) and fold in diced apples if using.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Transfer the batter to the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack and sprinkle with the cinnamon-sugar topping.
  8. Slice and serve warm or at room temperature.
