- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 1 cup apple cider
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup diced apples (optional)
- For the topping: ¼ cup granulated sugar mixed with 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mix the dry ingredients (flour, sugar, baking powder, baking soda, cinnamon, nutmeg, salt) in a large bowl.
- In another bowl, combine the wet ingredients (apple cider, vegetable oil, eggs, vanilla extract) and fold in diced apples if using.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack and sprinkle with the cinnamon-sugar topping.
- Slice and serve warm or at room temperature.
Notes
- For best results, do not overmix the batter.
- This loaf is great for sharing or enjoying with a cup of coffee.
