Instructions

  1. Preheat oven to 400°F (200°C) and prepare all ingredients.
  2. Sauté onion and bell pepper in olive oil for 5 minutes.
  3. Add garlic, paprika, and thyme; cook for 1-2 minutes.
  4. Mix potatoes, sautéed vegetables, and sausage in a bowl; season with salt and pepper.
  5. Transfer mixture to a baking dish and spread evenly.
  6. Bake covered for 35-40 minutes until potatoes are fork-tender; uncover in the last 10 minutes.
  7. Add cheese on top and bake for an additional 5-10 minutes until melted.
  8. Garnish with parsley and serve warm.
