- 1 pound smoked sausage, sliced
- 4 medium potatoes, diced (about 2 pounds)
- 1 large onion, chopped
- 1 bell pepper, diced (any color)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your favorite variety)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and prepare all ingredients.
- Sauté onion and bell pepper in olive oil for 5 minutes.
- Add garlic, paprika, and thyme; cook for 1-2 minutes.
- Mix potatoes, sautéed vegetables, and sausage in a bowl; season with salt and pepper.
- Transfer mixture to a baking dish and spread evenly.
- Bake covered for 35-40 minutes until potatoes are fork-tender; uncover in the last 10 minutes.
- Add cheese on top and bake for an additional 5-10 minutes until melted.
- Garnish with parsley and serve warm.
Notes
- For a spicier version, add red pepper flakes.
- Leftovers can be stored in the refrigerator for up to 3 days.
