Skillet Bang Bang Chicken Thighs

Ingredients

  • 4 thighs bone-in, skin-on chicken
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Chopped green onions or cilantro for garnish

Instructions

  • Season chicken thighs with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken thighs, skin-side down, and cook for 6-7 minutes until golden brown.
  • Flip thighs and cook an additional 6-7 minutes until internal temperature reaches 165°F.
  • While chicken cooks, mix mayonnaise, sweet chili sauce, sriracha, garlic powder, and onion powder.
  • Remove chicken and let it rest. Reduce heat to low and add sauce to skillet.
  • Return chicken to skillet and coat with sauce, simmering for a few minutes.
  • Garnish with green onions or cilantro before serving.
