- 4 thighs bone-in, skin-on chicken
- to taste Salt and pepper
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Chopped green onions or cilantro for garnish
Instructions
- Season chicken thighs with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken thighs, skin-side down, and cook for 6-7 minutes until golden brown.
- Flip thighs and cook an additional 6-7 minutes until internal temperature reaches 165°F.
- While chicken cooks, mix mayonnaise, sweet chili sauce, sriracha, garlic powder, and onion powder.
- Remove chicken and let it rest. Reduce heat to low and add sauce to skillet.
- Return chicken to skillet and coat with sauce, simmering for a few minutes.
- Garnish with green onions or cilantro before serving.
