  • 1 pound boneless, skinless chicken breasts
  • 1 jar (12 ounces) roasted red peppers, drained and chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • for garnish Fresh basil (optional)

Instructions

  • Start by heating the olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Add the chicken to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
  • Once the chicken is cooked, remove it from the skillet and set aside.
  • In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  • Stir in the chopped roasted red peppers and chicken broth. Bring the mixture to a simmer.
  • Add the chicken back into the skillet, allowing it to soak in the flavors for about 5 more minutes.
  • Garnish with fresh basil before serving.
