- 1 pound boneless, skinless chicken breasts
- 1 jar (12 ounces) roasted red peppers, drained and chopped
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning

- 1 tablespoon olive oil
- 1 cup chicken broth
- for garnish Fresh basil (optional)
Instructions
- Start by heating the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
- Once the chicken is cooked, remove it from the skillet and set aside.
- In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Stir in the chopped roasted red peppers and chicken broth. Bring the mixture to a simmer.
- Add the chicken back into the skillet, allowing it to soak in the flavors for about 5 more minutes.
- Garnish with fresh basil before serving.
