- 1 teaspoon vanilla extract
- Zest of 1 large orange
- 1/2 cup dried cranberries
- Optional: 1/4 cup chopped walnuts or pecans
Instructions
- Gather ingredients and preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mix flour, oats, baking soda, and salt.
- In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla extract; beat until just combined.
- Mix in orange zest, then gradually add dry ingredients until just combined.
- Fold in cranberries and optional nuts.
- Scoop dough onto the baking sheet, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges are golden; they should be slightly underbaked in the center.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
