- 1 lb boneless, skinless chicken thighs or breasts
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt (for dumplings)
- ½ cup milk
- ¼ cup unsalted butter, melted
- Fresh parsley, for garnish (optional)
Instructions
- Prepare the ingredients by chopping vegetables and mincing garlic.
- Cook onion in olive oil, add carrots, celery, garlic, thyme, and rosemary.
- Add chicken and broth, season, bring to boil, then simmer until chicken is cooked.
- Shred the cooked chicken and return it to the pot.
- Mix dumpling batter with flour, baking powder, salt, milk, and butter.
- Drop dumplings onto soup and cook covered until fluffy.
- Serve hot, garnished with parsley.

- For extra flavor, consider adding herbs or spices of your choice.
- Leftovers can be stored in the refrigerator for a few days.
