- 1 cup all-purpose flour

- 1 cup celery, sliced

Instructions
- Prepare the ingredients by cutting the beef into pieces and seasoning with salt and pepper.
- Dredge the beef in flour, coating well on all sides.
- Heat olive oil, then sear the beef until golden brown on both sides.
- Sauté onions, garlic, carrots, and celery in the same skillet until onions are translucent.
- Add beef broth, diced tomatoes, Worcestershire sauce, and thyme, then bring to a simmer.
- Return the beef to the pot, cover, and simmer for 1.5 to 2 hours until tender.
- Check for tenderness and adjust cooking time if necessary.
- Taste and adjust seasoning as needed.
- Serve the Swiss Steak over mashed potatoes or with crusty bread, ladling gravy over the top.
