  • 2 cups cherry tomatoes, halved
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon olive oil

  • 1 lemon juiced

Instructions

  • Start by heating olive oil in a large skillet over medium heat. Once hot, add the diced onion and sauté until translucent, about 4-5 minutes.
  • Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
  • Next, toss in the halved cherry tomatoes, oregano, red pepper flakes, salt, and pepper. Cook for about 5-7 minutes until the tomatoes start to break down and become saucy.
  • Gently place the cod fillets into the skillet, spooning some of the tomato mixture over the top. Cover the skillet and let it simmer for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
  • In the last minute of cooking, add the fresh basil and lemon juice for a bright finish. Stir to combine.
  • Serve immediately, garnished with additional basil if desired.
