- 1/4 cup maple syrup
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 2 cloves garlic, minced

- Salt and pepper to taste
Instructions
- Make the marinade by whisking together maple syrup, Dijon mustard, olive oil, garlic, and rosemary. Season with salt and pepper.
- Marinate the pork in a resealable bag or dish for at least 30 minutes in the refrigerator.
- Preheat the oven to 400°F (200°C).
- Sear the marinated pork in a hot skillet with olive oil for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and roast the pork for 20-25 minutes until it reaches 145°F (63°C).
- Let the pork rest for 5-10 minutes before slicing.
- Slice into medallions and serve with the remaining marinade drizzled on top.
