  • 2 slices thick sourdough bread
  • 4 oz cooked lobster meat, chopped
  • 2 slices cheddar cheese
  • 2 slices Gruyère cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  • Mix the chopped lobster meat with mayonnaise, lemon juice, salt, and pepper in a bowl.
  • Spread butter on one side of each slice of sourdough bread.
  • On the unbuttered side of one slice, place a slice of cheese, then add the lobster mixture, followed by another slice of cheese.
  • Heat a skillet over medium heat. Once hot, place the sandwich in the skillet and cook for about 3-4 minutes.
  • Carefully flip the sandwich and cook for another 3-4 minutes until golden brown and cheese is melted.
  • Remove from skillet and let cool for a minute before slicing in half.
