- 2 slices thick sourdough bread
- 4 oz cooked lobster meat, chopped
- 2 slices cheddar cheese
- 2 slices Gruyère cheese
- 2 tablespoons unsalted butter
- 1 tablespoon mayonnaise
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Mix the chopped lobster meat with mayonnaise, lemon juice, salt, and pepper in a bowl.
- Spread butter on one side of each slice of sourdough bread.
- On the unbuttered side of one slice, place a slice of cheese, then add the lobster mixture, followed by another slice of cheese.
- Heat a skillet over medium heat. Once hot, place the sandwich in the skillet and cook for about 3-4 minutes.
- Carefully flip the sandwich and cook for another 3-4 minutes until golden brown and cheese is melted.
- Remove from skillet and let cool for a minute before slicing in half.
