Crispy Garlic Anchovy Bruschetta

  • 1 baguette sliced into 1/2-inch pieces
  • 1 can (2 oz) anchovy fillets, packed in oil
  • 34 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • to taste Salt and pepper
  • Fresh parsley, chopped (for garnish)
  • Zest of 1 lemon (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with salt.
  • Bake the bread for 8-10 minutes, until golden brown and crispy.
  • While the bread is toasting, heat the remaining olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes.
  • Add the anchovy fillets to the pan and cook for another minute, breaking them down.
  • Remove the toasted bread from the oven and spoon the anchovy garlic mixture on each slice.
  • Garnish with fresh parsley and lemon zest if desired. Serve immediately!
