- 1 baguette sliced into 1/2-inch pieces
- 1 can (2 oz) anchovy fillets, packed in oil
- 3–4 cloves garlic, minced
- 1/4 cup extra virgin olive oil
- to taste Salt and pepper
- Fresh parsley, chopped (for garnish)
- Zest of 1 lemon (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with salt.
- Bake the bread for 8-10 minutes, until golden brown and crispy.
- While the bread is toasting, heat the remaining olive oil in a pan over medium heat. Add the minced garlic and sauté for 1-2 minutes.
- Add the anchovy fillets to the pan and cook for another minute, breaking them down.
- Remove the toasted bread from the oven and spoon the anchovy garlic mixture on each slice.
- Garnish with fresh parsley and lemon zest if desired. Serve immediately!
