- 2 lbs chicken breasts, cut into strips
- 1 cup dill pickle juice
- 1 cup breadcrumbs (Panko works great!)
- 1/2 cup grated Parmesan cheese
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
- Cooking spray or olive oil for drizzling
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chicken strips and dill pickle juice. Let them marinate for at least 30 minutes.
- Mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a separate bowl.
- Remove the chicken from the pickle juice and let any excess drip off. Dredge each strip in the breadcrumb mixture.
- Place the coated chicken strips on the prepared baking sheet. Lightly spray or drizzle with olive oil.
- Bake for 20-25 minutes or until golden brown and cooked through. Turn on the broiler for extra crunch.
- Let the chicken rest for a few minutes before serving.
