Crispy Dill Pickle Parmesan Chicken

A delicious twist on classic chicken, this crispy dill pickle parmesan chicken is easy to make and packed with flavor.

  • 2 lbs chicken breasts, cut into strips
  • 1 cup dill pickle juice
  • 1 cup breadcrumbs (Panko works great!)
  • 1/2 cup grated Parmesan cheese
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil for drizzling

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the chicken strips and dill pickle juice. Let them marinate for at least 30 minutes.
  • Mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a separate bowl.
  • Remove the chicken from the pickle juice and let any excess drip off. Dredge each strip in the breadcrumb mixture.
  • Place the coated chicken strips on the prepared baking sheet. Lightly spray or drizzle with olive oil.
  • Bake for 20-25 minutes or until golden brown and cooked through. Turn on the broiler for extra crunch.
  • Let the chicken rest for a few minutes before serving.
