  • 2 cups baby spinach
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)
  • Fresh herbs (for garnish (like parsley or chives, optional))

Instructions

  • Start by heating the olive oil in a large skillet over medium heat. You want to get it nice and hot for cooking the sausage.
  • Add the sliced chicken sausage to the skillet. Cook for about 5-7 minutes or until browned and cooked through, stirring occasionally.
  • Once the sausage is cooked, add the chopped onion and diced bell pepper to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.
  • Next, stir in the baby spinach and sprinkle in the garlic powder, salt, and pepper. Cook for another 2-3 minutes until the spinach is wilted.
  • Make four small wells in the skillet mixture. Crack an egg into each well. Cover the skillet with a lid and let it cook for about 5-6 minutes, or until the eggs are set to your liking.
  • Once the eggs are cooked, sprinkle fresh herbs on top for a pop of flavor. Serve warm and enjoy!
