- 1 pound chicken sausage (sliced)
- 1 bell pepper (diced (any color you like))
- 1 medium onion (chopped)
- 2 cups baby spinach
- 4 large eggs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper (to taste)
- Fresh herbs (for garnish (like parsley or chives, optional))
Instructions
- Start by heating the olive oil in a large skillet over medium heat. You want to get it nice and hot for cooking the sausage.
- Add the sliced chicken sausage to the skillet. Cook for about 5-7 minutes or until browned and cooked through, stirring occasionally.
- Once the sausage is cooked, add the chopped onion and diced bell pepper to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.
- Next, stir in the baby spinach and sprinkle in the garlic powder, salt, and pepper. Cook for another 2-3 minutes until the spinach is wilted.
- Make four small wells in the skillet mixture. Crack an egg into each well. Cover the skillet with a lid and let it cook for about 5-6 minutes, or until the eggs are set to your liking.
- Once the eggs are cooked, sprinkle fresh herbs on top for a pop of flavor. Serve warm and enjoy!
