Ingredients
Scale
- 2 cups shredded mushrooms (preferably portobello or shiitake)
- 1 cup BBQ sauce
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 4 soft burger buns
- Coleslaw (optional, for topping)
- Pickles (optional, for topping)
Instructions
- Start by heating the olive oil in a skillet over medium heat.
- Add the chopped onion and sauté until they become translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the shredded mushrooms to the skillet. Season with salt and pepper. Sauté for about 5-7 minutes until the mushrooms are tender.
- Pour in your BBQ sauce and mix well. Let it simmer on low heat for about 10 minutes, allowing the flavors to meld.
- While the mushroom mixture simmers, toast your burger buns until golden brown.
- Once the mushrooms are ready, assemble your sandwich by placing a generous scoop of the BBQ pulled mushrooms on the bottom half of each bun.
- Top with coleslaw and pickles if desired, then close with the top half of the bun.
- Serve immediately with extra BBQ sauce on the side.
