BBQ Pulled Mushroom Sandwich

  • 2 cups shredded mushrooms (preferably portobello or shiitake)
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 soft burger buns
  • Coleslaw (optional, for topping)
  • Pickles (optional, for topping)

Instructions

  • Start by heating the olive oil in a skillet over medium heat.
  • Add the chopped onion and sauté until they become translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the shredded mushrooms to the skillet. Season with salt and pepper. Sauté for about 5-7 minutes until the mushrooms are tender.
  • Pour in your BBQ sauce and mix well. Let it simmer on low heat for about 10 minutes, allowing the flavors to meld.
  • While the mushroom mixture simmers, toast your burger buns until golden brown.
  • Once the mushrooms are ready, assemble your sandwich by placing a generous scoop of the BBQ pulled mushrooms on the bottom half of each bun.
  • Top with coleslaw and pickles if desired, then close with the top half of the bun.
  • Serve immediately with extra BBQ sauce on the side.
