  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 cups sliced carrots
  • 1 cup sliced celery
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper to taste

Instructions

  1. Mix ground beef, breadcrumbs, Parmesan cheese, onion, egg, garlic powder, salt, and pepper in a bowl; form into 1-inch meatballs.
  2. Heat olive oil in a pot and brown the meatballs for 3-4 minutes per side; set aside.
  3. Sauté sliced carrots and celery in the same pot for 5-7 minutes until softened.
  4. Add beef broth, scrape the pot for flavor, and return meatballs; simmer for 10 minutes.
  5. Stir in heavy cream and simmer for an additional 5 minutes.
  6. Adjust seasoning, add dill, serve in bowls garnished with extra dill or parsley.
