- 1 pound ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
- 1 cup heavy cream
- 2 cups sliced carrots
- 1 cup sliced celery
- 1 tablespoon olive oil
- 1 tablespoon fresh dill (or 1 teaspoon dried dill)
- Salt and pepper to taste
Instructions
- Mix ground beef, breadcrumbs, Parmesan cheese, onion, egg, garlic powder, salt, and pepper in a bowl; form into 1-inch meatballs.
- Heat olive oil in a pot and brown the meatballs for 3-4 minutes per side; set aside.
- Sauté sliced carrots and celery in the same pot for 5-7 minutes until softened.
- Add beef broth, scrape the pot for flavor, and return meatballs; simmer for 10 minutes.
- Stir in heavy cream and simmer for an additional 5 minutes.
- Adjust seasoning, add dill, serve in bowls garnished with extra dill or parsley.
Notes
- For best results, don’t overmix the meatball mixture.
- Adjust the seasoning to your taste before serving.
