Instructions

  1. Prepare ingredients: rinse rice, cut chicken, and prepare corn.
  2. Cook rice in water/broth: boil, reduce heat, cover, and simmer for 15-20 minutes.
  3. Heat olive oil in a skillet, cook seasoned chicken until browned (6-8 minutes).
  4. Add corn to the skillet, stir, and cook for 3-5 minutes.
  5. Mix mayonnaise, sour cream, and lime juice in a bowl for the crema.
  6. Assemble the bowl with rice, chicken, corn, crema, feta, and cilantro.
