- 1 cup of uncooked rice (white or brown)
- 2 cups of water or chicken broth
- 1 pound of boneless, skinless chicken breasts
- 2 cups of corn (fresh, frozen, or canned)
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- Salt and pepper, to taste
- 2 tablespoons of olive oil
- 1 lime, juiced
- 1 cup of mayonnaise
- ½ cup of sour cream
- 1 cup of crumbled feta cheese
- Fresh cilantro, for garnish
Instructions
- Prepare ingredients: rinse rice, cut chicken, and prepare corn.
- Cook rice in water/broth: boil, reduce heat, cover, and simmer for 15-20 minutes.
- Heat olive oil in a skillet, cook seasoned chicken until browned (6-8 minutes).
- Add corn to the skillet, stir, and cook for 3-5 minutes.
- Mix mayonnaise, sour cream, and lime juice in a bowl for the crema.
- Assemble the bowl with rice, chicken, corn, crema, feta, and cilantro.

- Adjust lime juice in the crema to taste.
- Use fresh, frozen, or canned corn based on availability.
