  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (for topping)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare spaghetti squash by cutting in half, removing seeds, and roasting for 30-40 minutes.
  2. While the squash roasts, mix heavy cream, garlic powder, onion powder, salt, pepper, 1 cup cheddar, and ½ cup Parmesan in a bowl.
  3. Shred the roasted squash into strands and allow it to cool slightly.
  4. Combine the cheese mixture with the shredded squash, adjusting seasoning as needed.
  5. Mix breadcrumbs with remaining Parmesan and olive oil for topping.
  6. Spread the cheesy squash mixture in a greased baking dish and top with breadcrumb mixture.
  7. Bake for 25-30 minutes until golden brown and bubbly.
  8. Garnish with parsley, serve warm, and enjoy!
