- 1 pound of carrots, peeled and cut into 2-inch pieces
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of honey (optional)
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- Wash and peel the carrots, then cut them into 2-inch pieces.
- Boil the carrots in salted water for 10-12 minutes until fork-tender.
- Drain the carrots and let them dry for a minute.
- Smash the drained carrots in a bowl with a fork or potato masher.
- Add olive oil, black pepper, and honey (if using), and mix well.
- Preheat the oven to 400°F (200°C) and roast the smashed carrots for 15-20 minutes until caramelized.
- Garnish with fresh herbs and serve warm.
