Instructions

  1. Wash and peel the carrots, then cut them into 2-inch pieces.
  2. Boil the carrots in salted water for 10-12 minutes until fork-tender.
  3. Drain the carrots and let them dry for a minute.
  4. Smash the drained carrots in a bowl with a fork or potato masher.
  5. Add olive oil, black pepper, and honey (if using), and mix well.
  6. Preheat the oven to 400°F (200°C) and roast the smashed carrots for 15-20 minutes until caramelized.
  7. Garnish with fresh herbs and serve warm.
