- 2 pounds boneless, skinless chicken thighs
- 1 cup chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 2 cups uncooked pasta (penne or rotini work well)
- 1 cup fresh spinach (or any greens you prefer)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Prep the onion and garlic.
- Layer chicken thighs in the slow cooker.
- Add chopped onion and minced garlic over the chicken.
- Pour in chicken broth and diced tomatoes; stir gently.
- Season with Italian seasoning, salt, and pepper; stir again.
- Cook on low for 6-7 hours or high for 3-4 hours.
- 30 minutes before serving, stir in uncooked pasta and heavy cream.
- Once pasta is cooked, add fresh spinach and stir until wilted.
- Serve with Parmesan cheese if desired.
