  • 1 pound raw shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare all ingredients: slice sausage, peel shrimp, and dice vegetables.
  2. In a skillet, heat olive oil and sauté sausage until browned.
  3. Add diced onion, bell pepper, celery, and minced garlic; cook until softened.
  4. Stir in rice and Cajun seasoning, toasting for 2 minutes.
  5. Pour in chicken broth, stir, bring to a boil, and simmer covered for 15-20 minutes.
  6. Add shrimp, cover, and cook until shrimp are pink.
  7. Fluff rice with a fork and adjust seasoning before serving.
