  • 1 lb fresh salmon, skinless and cubed

  • 1 avocado, sliced
  • ½ cup mayonnaise
  • 2 tablespoons sriracha (adjust for spice level)
  • ¼ cup chopped green onions
  • 2 tablespoons toasted sesame seeds
  • Nori sheets, for serving

Instructions

  1. Rinse sushi rice under cold water and soak in water for 30 minutes.
  2. Cook rice by boiling, then simmering for 18-20 minutes, and let it rest for 10 minutes.
  3. Mix soy sauce and sesame oil, then fold into the rested rice.
  4. Marinate salmon cubes with soy sauce for 10 minutes.
  5. Preheat oven to 350°F (175°C) and spread seasoned rice in a greased baking dish.
  6. Layer marinated salmon over the rice.
  7. Mix mayonnaise and sriracha, then spread over the salmon.
  8. Top with sliced avocado, green onions, and sesame seeds.
  9. Bake for 25-30 minutes until golden and bubbly.
  10. Cool for 5 minutes, then serve with nori sheets.
