- 2 cups sushi rice
- 2 ½ cups water
- 1 lb fresh salmon, skinless and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 avocado, sliced
- ½ cup mayonnaise
- 2 tablespoons sriracha (adjust for spice level)
- ¼ cup chopped green onions
- 2 tablespoons toasted sesame seeds
- Nori sheets, for serving
Instructions
- Rinse sushi rice under cold water and soak in water for 30 minutes.
- Cook rice by boiling, then simmering for 18-20 minutes, and let it rest for 10 minutes.
- Mix soy sauce and sesame oil, then fold into the rested rice.
- Marinate salmon cubes with soy sauce for 10 minutes.
- Preheat oven to 350°F (175°C) and spread seasoned rice in a greased baking dish.
- Layer marinated salmon over the rice.
- Mix mayonnaise and sriracha, then spread over the salmon.
- Top with sliced avocado, green onions, and sesame seeds.
- Bake for 25-30 minutes until golden and bubbly.
- Cool for 5 minutes, then serve with nori sheets.

- Adjust sriracha based on your spice preference.
