  • 1 medium onion, diced
  • 1 bell pepper, diced (green, red, or a mix)
  • 2 cloves of garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes (about 2 medium potatoes)
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup shredded provolone cheese (or your favorite cheese)
  • 2 tablespoons olive oil

Instructions

  1. Prepare the ingredients by slicing the beef and dicing the onion and bell pepper; mince the garlic.
  2. Sauté the onion and bell pepper in olive oil until soft, then add garlic and cook for 1 more minute.
  3. Brown the beef in the pot, seasoning with salt and pepper, for about 5-7 minutes.
  4. Add beef broth and diced potatoes, bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
  5. Stir in Worcestershire sauce and adjust seasoning as needed.
  6. Remove from heat and gradually stir in shredded provolone cheese until melted.
