Ingredients

- 1 pound of thinly sliced beef (sirloin works best)
- 1 medium onion, diced
- 1 bell pepper, diced (green, red, or a mix)
- 2 cloves of garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes (about 2 medium potatoes)
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1 cup shredded provolone cheese (or your favorite cheese)
- 2 tablespoons olive oil
Instructions
- Prepare the ingredients by slicing the beef and dicing the onion and bell pepper; mince the garlic.
- Sauté the onion and bell pepper in olive oil until soft, then add garlic and cook for 1 more minute.
- Brown the beef in the pot, seasoning with salt and pepper, for about 5-7 minutes.
- Add beef broth and diced potatoes, bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
- Stir in Worcestershire sauce and adjust seasoning as needed.
- Remove from heat and gradually stir in shredded provolone cheese until melted.
- Serve hot, garnished with extra cheese or fresh herbs if desired.

- Feel free to use different types of cheese for variation.
