- 1 pound ground beef (or turkey)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 cup elbow macaroni
- 1 cup shredded cheddar cheese
- 1 cup frozen corn (optional)

Instructions
- Prepare the ingredients by dicing onion and mincing garlic.
- Brown the ground beef in a large pot and drain excess fat.
- Add onion and garlic; sauté until translucent.
- Stir in taco seasoning and cook for 1 minute.
- Add diced tomatoes and beef broth; bring to a boil.
- Stir in elbow macaroni, cover, and simmer until tender.
- Remove from heat and mix in cheese and corn.
- Season with salt and pepper to taste.
- Serve in bowls and garnish with cilantro.
