- 4 large russet potatoes, diced

- Red pepper flakes, optional

Instructions
- Gather and prep all ingredients.
- Cook the sausage in olive oil until browned.
- Add onion and garlic, sauté until translucent.
- Add potatoes and chicken broth, bring to a boil, then simmer until potatoes are tender.
- Add kale, simmer until wilted.
- Stir in heavy cream and heat through.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve hot, optionally topped with Parmesan cheese.
