Ingredients

  • ½ teaspoon instant yeast
  • 1 ½ cups warm water (about 110°F)
  • 1 head of garlic
  • 2 tablespoons fresh rosemary, chopped
  • Olive oil, for drizzling

Instructions

  1. Roast the garlic at 400°F for 30-35 minutes, then let cool and squeeze into a bowl.
  2. Mix flour, salt, and yeast in a bowl.
  3. Add warm water and roasted garlic, stirring until no dry flour remains. Cover and rest for 12-18 hours.
  4. Fold in chopped rosemary gently and rest for another hour.
  5. Shape the dough into a ball and let rest for 30 minutes.
  6. Preheat oven to 450°F with a Dutch oven inside.
  7. Transfer dough to the hot pot, drizzle with olive oil, cover, and bake for 30 minutes.
  8. Remove lid and bake for an additional 15-20 minutes until golden brown.
  9. Cool on a wire rack for 30 minutes before slicing.
