Instructions
- Make the dough with flour, salt, and eggs; knead and let it rest.
- Sauté garlic, mushrooms, and spinach in olive oil; cool slightly.
- Mix sautéed ingredients with ricotta; season and set aside.
- Roll out the dough into thin sheets.
- Fill ravioli with the mixture, seal, and cut into individual pieces.
- Cook ravioli in salted boiling water until they float.
- Optional: Toss cooked ravioli in a sauce with reserved pasta water.
- Serve with Parmesan cheese and enjoy!
