- 6 large eggs
- 1 cup corn (fresh or frozen, cooked)
- 1/4 cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons cotija cheese, crumbled
- Fresh cilantro, for garnish
Instructions
- Boil the eggs in cold water, then let them sit covered for 12 minutes before cooling in ice water.
- Prepare the corn by grilling fresh corn or thawing frozen corn.
- Peel the cooled eggs under running water, being careful not to tear the whites.
- Make the filling by mashing egg yolks with Greek yogurt, mayonnaise, lime juice, spices, salt, and pepper.
- Fold in the corn and half the cotija cheese into the yolk mixture.
- Fill the egg whites with the mixture using a spoon or piping bag.
- Garnish with remaining cotija cheese, chili powder, and fresh cilantro.
- Chill for at least 30 minutes before serving.
