Ingredients

  • 1 cup corn (fresh or frozen, cooked)
  • 1/4 cup Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons cotija cheese, crumbled
  • Fresh cilantro, for garnish

Instructions

  1. Boil the eggs in cold water, then let them sit covered for 12 minutes before cooling in ice water.
  2. Prepare the corn by grilling fresh corn or thawing frozen corn.
  3. Peel the cooled eggs under running water, being careful not to tear the whites.
  4. Make the filling by mashing egg yolks with Greek yogurt, mayonnaise, lime juice, spices, salt, and pepper.
  5. Fold in the corn and half the cotija cheese into the yolk mixture.
  6. Fill the egg whites with the mixture using a spoon or piping bag.
  7. Garnish with remaining cotija cheese, chili powder, and fresh cilantro.
  8. Chill for at least 30 minutes before serving.
