  • 1 cup corn (canned or frozen)

Instructions

  1. Wash and dry the chicken, then cut into bite-sized pieces.
  2. Toss chicken with olive oil and spices, marinate for 5 minutes.
  3. Cook the chicken in a skillet over medium-high heat until golden and cooked through (5-7 minutes).
  4. Add diced tomatoes and corn, cook for another 3-5 minutes.
  5. Reduce heat, add cheese, cover, and melt (2-3 minutes).
  6. Serve garnished with cilantro.
