- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup diced tomatoes (canned or fresh)
- 1 cup corn (canned or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, for garnish
Instructions
- Wash and dry the chicken, then cut into bite-sized pieces.
- Toss chicken with olive oil and spices, marinate for 5 minutes.
- Cook the chicken in a skillet over medium-high heat until golden and cooked through (5-7 minutes).
- Add diced tomatoes and corn, cook for another 3-5 minutes.
- Reduce heat, add cheese, cover, and melt (2-3 minutes).
- Serve garnished with cilantro.
