Instructions

  1. Prepare the ingredients by chopping the onion, garlic, carrots, and potatoes; rinse the lentils.
  2. Sauté the onion in olive oil until translucent, then add garlic and cook for another minute.
  3. Add diced carrots and potatoes; cook for about 5 minutes.
  4. Stir in lentils, thyme, and smoked paprika, mixing well.
  5. Pour in vegetable broth, bring to a boil, then simmer covered for 25-30 minutes.
  6. Season with salt and pepper, garnish with parsley if desired, and serve.
