- 1 cup dried green or brown lentils, rinsed
- 6 cups vegetable broth

- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the ingredients by chopping the onion, garlic, carrots, and potatoes; rinse the lentils.
- Sauté the onion in olive oil until translucent, then add garlic and cook for another minute.
- Add diced carrots and potatoes; cook for about 5 minutes.
- Stir in lentils, thyme, and smoked paprika, mixing well.
- Pour in vegetable broth, bring to a boil, then simmer covered for 25-30 minutes.
- Season with salt and pepper, garnish with parsley if desired, and serve.
Notes
- For added flavor, consider a splash of lemon juice before serving.
