- 1 pound boneless, skinless chicken thighs
- 1 cup rice (white or brown)
- 1 cup chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 2 tablespoons soy sauce

- Salt and pepper to taste

Instructions
- Prepare all ingredients and chop chicken into bite-sized pieces.
- Cook rice in chicken broth until tender, about 15-20 minutes.
- Heat olive oil in a skillet over medium heat.
- Add chicken to the skillet, season, and sauté until browned.
- Mix BBQ sauce, honey, and soy sauce in a bowl.
- Pour sauce over cooked chicken and simmer for 3-5 minutes.
- Fluff the cooked rice with a fork.
- Serve rice topped with honey BBQ chicken and garnish with green onions.
