Ingredients

- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 2 cups beef broth
- 1 cup red wine (optional, but recommended)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare and chop all ingredients, including beef, vegetables, and aromatics.
- In a pot, heat olive oil and sear beef cubes until browned, then set aside.
- Sauté onions until translucent, then add garlic and cook until fragrant.
- Add carrots, potatoes, and green beans; cook for 5 minutes.
- Deglaze the pot with red wine (or extra beef broth) and simmer for 2-3 minutes.
- Return beef to the pot, add broth, tomato paste, thyme, bay leaf, and season.
- Bring to a boil, then reduce heat and simmer for 2 to 2.5 hours until beef is tender.
- Adjust seasoning as needed, remove bay leaf.
- Serve in bowls garnished with parsley and enjoy!
Notes
- Serve with crusty bread for a complete meal.
- Can substitute red wine with additional beef broth if desired.
