  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 2 cups beef broth
  • 1 cup red wine (optional, but recommended)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare and chop all ingredients, including beef, vegetables, and aromatics.
  2. In a pot, heat olive oil and sear beef cubes until browned, then set aside.
  3. Sauté onions until translucent, then add garlic and cook until fragrant.
  4. Add carrots, potatoes, and green beans; cook for 5 minutes.
  5. Deglaze the pot with red wine (or extra beef broth) and simmer for 2-3 minutes.
  6. Return beef to the pot, add broth, tomato paste, thyme, bay leaf, and season.
  7. Bring to a boil, then reduce heat and simmer for 2 to 2.5 hours until beef is tender.
  8. Adjust seasoning as needed, remove bay leaf.
  9. Serve in bowls garnished with parsley and enjoy!
