- 4 boneless, skinless chicken thighs
- 1 cup fresh pineapple chunks
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C) and prepare chicken and vegetables.
- Whisk soy sauce, honey, olive oil, garlic, and ginger to make the marinade.
- Marinate the chicken in a resealable bag or bowl for at least 15 minutes.
- Arrange marinated chicken on a baking sheet with bell peppers and pineapple.
- Drizzle remaining marinade over the dish and season with salt and pepper.
- Bake for 25-30 minutes until chicken is cooked through and vegetables are charred.
- Let rest, garnish with sesame seeds and cilantro, and serve.
