- 1 lb ground turkey
- 2 medium zucchinis, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- 1 cup cooked brown rice (or quinoa for a gluten-free option)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Prepare the ingredients by chopping zucchini, dicing onion, and mincing garlic.
- Sauté onion in olive oil until translucent, then add garlic and zucchini, cooking until slightly softened.
- Push veggies aside, add ground turkey, and cook until browned.
- Stir in diced tomatoes, cooked rice, and seasoning; mix well.
- Transfer mixture to a greased casserole dish and spread evenly.
- Top with mozzarella cheese.
- Cover with foil and bake at 375°F for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
- Let cool slightly before serving.
