- 4 boneless, skinless chicken breasts
- 1 cup salsa verde
- 1 cup shredded pepper jack cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Mix salsa verde, olive oil, garlic powder, onion powder, salt, and pepper in a bowl to create the marinade.
- Marinate chicken in the mixture for at least 30 minutes or up to 4 hours in the refrigerator.
- Preheat the grill to medium-high heat (about 400°F).
- Grill chicken for 6-7 minutes on one side, then flip.
- After flipping, grill for another 6-7 minutes and add cheese just before fully cooked.
- Check for doneness (internal temperature should be 165°F) and let rest for 5 minutes.
- Slice and serve garnished with cilantro if desired.
