- 1 pound boneless, skinless chicken thighs
- 3 tablespoons olive oil
- Juice of 2 lemons
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 4 whole wheat pita breads
- 1 cup cucumber, diced
- 1 cup tomatoes, diced
- ½ red onion, thinly sliced
- ½ cup tzatziki sauce (store-bought or homemade)
Instructions
- Mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper to create the marinade.
- Marinate chicken thighs in the mixture for at least 20 minutes in the fridge.
- Preheat the grill or grill pan to medium-high heat.
- Grill marinated chicken for 5-7 minutes per side until fully cooked.
- Let the chicken rest for 5 minutes before slicing.
- Warm pita breads on the grill for 1-2 minutes on each side.
- Assemble gyros with chicken, cucumber, tomatoes, red onion, and tzatziki in the pita.
- Serve and enjoy your Greek Chicken Gyros!
