Instructions
- Preheat the oven to 400°F (200°C).
- Mix garlic, rosemary, thyme, olive oil, salt, and pepper in a bowl; add mustard and vinegar if desired.
- Coat the pork tenderloin with the marinade.
- Sear the pork in a hot skillet for 2-3 minutes on each side.
- Roast in the oven for 20-25 minutes until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 10 minutes after roasting.
- Slice the pork into medallions and serve with juices drizzled on top.
