- 4–6 corn or flour tortillas
- 1/2 cup diced bell peppers (optional)
- 1/2 cup chopped green onions (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Whisk together eggs, milk, salt, black pepper, and garlic powder in a large bowl.
- Layer tortillas at the bottom of the greased dish.
- Add cooked sausage and optional bell peppers, then top with shredded cheese.
- Pour the egg mixture over the layered ingredients.
- Bake for 30-35 minutes until golden brown and set.
- Cool for 5-10 minutes and garnish with green onions.
- Slice and serve warm.
