Instructions
- Prepare the ingredients by dicing the onion, mincing the garlic, and chopping the chicken.
- Sauté the onion in olive oil until translucent, then add garlic.
- Add the chicken and cook until lightly browned and cooked through.
- Stir in chicken broth, tomatoes, black beans, corn, and taco seasoning.
- Bring to a boil, then simmer for 10-15 minutes, adjusting seasoning as desired.
- Serve with cilantro and optional toppings like avocado and cheese.
