- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 4 cups seafood stock
- 1 cup heavy cream
- 8 ounces crab meat, picked over for shells
- 8 ounces shrimp, peeled and deveined
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare the ingredients: chop the onion, mince the garlic, and dice the tomatoes.
- Heat olive oil in a large pot and sauté the onion until translucent, then add garlic.
- Stir in the diced tomatoes and cook for 5-7 minutes.
- Add seafood stock and let it simmer for 15 minutes.
- Incorporate the heavy cream and bring to a simmer.
- Fold in crab meat and shrimp, seasoning with Old Bay, salt, and pepper; cook until shrimp is pink.
- Optionally blend the bisque for a smoother texture.
- Serve hot, garnished with fresh parsley.
