- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color you prefer)
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Prepare the ingredients: chop onion, dice bell pepper, and chop celery.
- Sauté onion, bell pepper, and celery in olive oil for 5-7 minutes.
- Add garlic and chicken, cooking until chicken is golden brown.
- Sprinkle Cajun seasoning and stir for 1 minute.
- Add diced tomatoes and chicken broth, bring to a boil, then simmer for 20 minutes.
- Shred the chicken once cooked and return to the pot.
- Stir in heavy cream and simmer for another 5 minutes.
- Season to taste with salt and pepper.
- Serve hot, garnished with parsley if desired.
Notes
- Feel free to adjust the spiciness by adding more Cajun seasoning or hot sauce.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
