- 1 medium head of cauliflower, cut into florets
- 2 cups cooked chicken, shredded
- 1 cup buffalo sauce (choose your favorite brand or homemade)
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- ½ cup green onions, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C) and boil cauliflower florets for 5-7 minutes until fork-tender. Drain and cool.
- In a bowl, mix cream cheese, sour cream, buffalo sauce, garlic powder, onion powder, and seasoning until smooth.
- Add shredded chicken to the sauce and stir until coated.
- Fold in cauliflower gently to maintain florets’ shape.
- Transfer mixture to a greased 9×13-inch baking dish.
- Top with shredded cheddar cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
- Let cool slightly, garnish with green onions, and serve hot.
Notes
- Feel free to adjust the amount of buffalo sauce for your desired spice level.
- This casserole can be made ahead of time and baked just before serving.
