Ingredients

  • 1 whole chicken (about 34 pounds)
  • 8 cups of chicken broth
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves of garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons butter, melted
  • 1 cup milk

Instructions

  1. Prepare the chicken by rinsing, drying, and removing giblets.
  2. Cook the chicken in broth at a simmer for 30-40 minutes until tender.
  3. Sauté onion, carrots, celery, and garlic in the broth pot for 5-7 minutes.
  4. Shred the chicken and return it to the pot with sautéed vegetables and seasonings.
  5. Make the dumpling dough by mixing flour, baking powder, salt, melted butter, and milk.
  6. Drop spoonfuls of dumpling dough into the simmering broth and cover for 15 minutes.
  7. Check dumplings for doneness and cook an additional 2-3 minutes if needed.
  8. Serve hot and enjoy!
