Deliciously Rustic: Country Ranch Green Beans and Potatoes with Bacon

Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 pound baby potatoes, halved or quartered
  • 4 slices of bacon, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon ranch seasoning mix (optional)

Instructions

  1. Wash and trim green beans and wash baby potatoes; halve or quarter as needed.
  2. Cook chopped bacon in a skillet over medium heat until crispy; remove and drain on paper towel.
  3. Add potatoes to the skillet with bacon fat; sauté for 10-12 minutes until browned and tender.
  4. Toss in green beans and a drizzle of olive oil; cook for 5-7 minutes until bright green and tender-crisp.
  5. Season with garlic powder, onion powder, salt, pepper, and optional ranch mix; cook for 1-2 minutes.
  6. Add the crispy bacon back into the skillet; stir and heat through for 1 minute.
  7. Serve warm, garnished as desired.
