Instructions
- Gather and wash the vegetables, then chop the cherry tomatoes, cucumber, bell pepper, and red onion.
- In a large bowl, combine the cottage cheese and chickpeas, folding them gently until mixed.
- Add the chopped vegetables to the bowl and stir gently to combine.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
- Pour the dressing over the salad and toss gently to coat.
- Garnish with chopped parsley and serve immediately or let chill for 15 minutes.
