- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Extra shredded coconut for topping (optional)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix flour, shredded coconut, powdered sugar, and butter to form a crust, press into the dish, and bake for 15 minutes.
- Whisk eggs and granulated sugar until thick, then add lime juice, zest, baking powder, and salt.
- Pour filling over the hot crust and bake for an additional 20-25 minutes.
- Cool in the pan for 30 minutes, then refrigerate for at least 2 hours.
- Lift out of the pan, slice, and optionally sprinkle with extra coconut before serving.
Notes
- Ensure to let the bars chill for easy slicing.
- Optional: Top with extra shredded coconut for presentation.
