  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced (any color)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Fresh dill or mint for garnish (optional)

Instructions

  1. Prepare ingredients: dice chicken, chop onion, and mince garlic.
  2. In an oven-safe skillet, sauté onion in olive oil until translucent, then add garlic.
  3. Add chicken, season with salt, pepper, and oregano; cook until golden brown.
  4. Stir in rice, pour in broth, bring to a boil, then simmer covered for 15 minutes.
  5. Incorporate tomatoes and bell pepper, cover, and cook for another 5-7 minutes.
  6. Prepare tzatziki by mixing yogurt, cucumber, lemon juice, and salt.
  7. After cooking, mix half the tzatziki into the bake and top with remaining tzatziki.
  8. Bake at 375°F (190°C) for 15-20 minutes until golden and bubbling.
  9. Let cool slightly, garnish, and serve warm.
