- 2 large chicken breasts (about 1 pound total)
- 2 tablespoons olive oil
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Gather and prepare all ingredients, pat chicken breasts dry, and season with salt and pepper.
- Heat olive oil in a skillet and sear chicken for 6-7 minutes on each side until golden brown and cooked through. Keep warm.
- In the same skillet, sauté minced garlic for 1 minute until fragrant.
- Add chopped spinach and cook for 2-3 minutes until wilted.
- Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese and Italian seasoning. Simmer for 5 minutes until thickened.
- Return chicken to the skillet, spoon sauce over it, and simmer for another 2-3 minutes.
- Garnish with parsley and serve over pasta, rice, or alone.
