- 2 cups cooked chicken, shredded
- 4 cups fresh spinach, roughly chopped
- 1 cup cooked rice (white or brown)
- 1 cup cream of chicken soup (or homemade equivalent)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/2 cup breadcrumbs (optional, for topping)
Instructions
- Gather and prepare all ingredients, shredding chicken and chopping spinach.
- Preheat the oven to 350°F (175°C).
- In a bowl, mix chicken, spinach, rice, soup, garlic powder, salt, and pepper.
- Add mozzarella and half of the parmesan cheese to the mixture.
- Grease a 9×13-inch baking dish with olive oil and pour in the mixture.
- If desired, sprinkle breadcrumbs and remaining parmesan on top.
- Bake for 25-30 minutes until bubbly and golden brown.
- Let the casserole rest for 5-10 minutes before serving.
- Serve warm and enjoy!

- Using rotisserie chicken can save time while adding flavor.
- Breadcrumbs are optional for a crunchy topping.
